On Christmas Eve we had a dinner with my parents here at our house. Joe's mom decided to hold her usual Christmas Eve party on the eve of Christmas Eve. It was great because it allowed us to carry on some of the traditions that we have established while living away. My parents usually do a traditional Christmas Eve dinner, but since our families are getting older, some of us have been doing our own thing. We invited Mom and Dad to come to our house for Christmas Eve dinner and it was a really nice evening. For the past few years, we've done soup on Christmas Eve, but since my parents do a meat/potatoes meal, I decided to do a twist on their tradition. I tried a new recipe call Lion House Chicken Supreme that was really good. I also made herb-roasted yukon potatoes, mixed vegetables, and homemade wheat rolls. We happen to have three ovens in our house and we rarely, if at all, use them all together. On this day, having them turned out to be a huge blessing to get everything cooked in time. Joseph was in charge of making a white wine mushroom sauce for the chicken (we used white grape juice). It was really good. We also had a plate of fresh fruit and of course sparkling cider. Mom made a homemade Olive Garden style salad and a carrot cake from Our Best Bites. We didn't make it to the carrot cake, we were all too full, so she froze it for us to eat over New Year's. We had a great time preparing and enjoying the meal together. Other details of Christmas Eve to come in a different post.
