Pumpkin Puff Pancakes with Apple Cider Syrup

Not to overshadow the conference post...I would love to hear what everyone else enjoyed about conference, but my friend Kami asked for this recipe last week and I thought I would share it here for all to enjoy! This is one of my favorite fall recipes....we LOVE fall in our family. I think it has finally arrived here in California. It's cool enough to start cooking warm, yummy foods in the kitchen and of course there are wonderful acitivities we love that involve leaves, pumpkins, apples, and football. It makes me excited just talking about it. Anyway, this is a recipe I received from Joe's mom many years ago. He made them for me when I was sick one day in high school, it was love at first taste. Here goes....

Pumpkin Puff Pancakes
2 eggs
1 cup buttermilk
1/2 cup cooked pumpkin
1 3/4 cup Bisquick
1/4 cup vegetable oil
pinch of salt
1/2 tsp. soda
2 Tbsp. brown sugar
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. ginger

In small mixing bowl, beat eggs on high speed for 5 minutes or ubtil thick and lemon colored. Stir in remaining ingredients. Pour batter from 1/4 cup onto medium hot ungreased griddle. Bake until puffed and bubbles begin to break.

Apple Cider Syrup
1 cup sugar (I actually put very little sugar in, maybe 1/4 cup or less, we think the cider makes it sweet enough, do what you like
2 T. cornstartch
1/4 tsp. cinnamon
1/4 tsp. nutmeg
2 cups apple cider
2 T. Lemon juice
1/4 cup melted butter

In saucepan, mix sugar, cornstarch, cinnamon and nutmeg; stir in apple cider and lemon juice. Cook stirring constantly, until mixture thickens and boils. Boil and stir for 1 minute. remove from heat, stir in melted butter. Makes 2 1/2 cups syrup.

Yum! These are so good. They practically melt in your mouth! Try them and tell me what you think! Enjoy!

I remember you making these for us when we were at Ricks. What great memories! I have thought about them but never asked for the recipe. I look at this yesterday, but didn't leave a comment. Then last night I dreamed about them. I can't wait to try it out!

Amy - I can't remember how much one recipe makes, but we usually double this recipe and keep the batter in the fridge for the next day.

Paul - Yes, I saw Laura's comment. We have gotten together with Sam and his wife Erica and their two (almost 3) children a few times. We were actually in the same stake when we lived in Rancho Cordova. Sam spoke at the Saturday adult session of Stake Conference and was quoted the next day by the Stake President. Pretty impressive, eh? We missed the session where he spoke, I guess that disqualifies us from considering ourselves Orthodox Mormon.:) Sam helped us move both times and was a great help each time. Our girls said, "When is your brother Sam going to come over with our cousins?" We realized our kids must get really confused trying to keep track of Joe's 8 brothers. it's fun to catch up with old friends and realize how much the same, yet different they are now.

Plus I LOVED all the comments you wrote on my warts post. I didn't know my grandpa would remove your warts. My dad evetually got his dad's cotterizer (it would burn them out) and when he used it on a plantar wart on the bottom of Greg's foot there was a hole in his heel for 3 months! That's a seriously dangerous weapon!

So sad you have a little one that fears doctors too. We'll both have to hope they grow out of it.

Mmmmm. I am always up for a good pumpkin recipe. I've been knee-deep in pumpkin goodies for the last few weeks now. I just can't stop!
